Induction cook tops work by magnetic induction. When cookware is placed in contact with the stoves surface a magnetic field is formed causing induced currents to flow through the base of the cookware. These currents transform the cookware into a heat source by what is called the joule effect, leaving the surface of the cook top cool to the touch. In addition, induction offers flexible cooking, going from extremely low to extremely high settings and back again almost instantly, a feature that professional chefs love. Safer cooking is another feature of induction cooking. Cookware must be present for the heat production to occur. So if the stove is turned on but there is no pan present, the stove top will not get hot. Some model cook tops have auto pan sizing that automatically adjust the burner to the pan size. Manufacturers of induction cooktops include Wolf, Viking, Diva de Provence, and others. |
